Easy Chicken Curry

Ingredients

  • 500 g chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp curry powder
  • 400 ml coconut milk
  • 2 tbsp tomato paste
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh coriander, for garnish

Instructions

  1. 1 Heat oil in a large pan. Sauté onion, garlic, and ginger until fragrant.
  2. 2 Add chicken, cook until browned.
  3. 3 Stir in curry powder and tomato paste, cook for 1 minute.
  4. 4 Pour in coconut milk, stir well. Simmer for 15-20 minutes until chicken is cooked through.
  5. 5 Season with salt and pepper. Garnish with coriander.
  6. 6 Serve with rice or naan bread.

Tips & Notes

• Adjust the curry powder to your taste preference - start with less if you prefer milder flavors.

• Use full-fat coconut milk for the richest and creamiest texture.

• Let the curry simmer gently to allow flavors to develop fully.
