Classic Spaghetti Carbonara

Ingredients
- • 400 g spaghetti
- • 150 g pancetta, diced
- • 2 large eggs
- • 1 egg yolk
- • 60 g Parmesan cheese, grated
- • 2 cloves garlic, minced
- • Salt and black pepper, to taste
- • Fresh parsley, chopped (optional)
Instructions
- 1 Cook the spaghetti in salted boiling water until al dente. Reserve 100 ml pasta water, then drain.
- 2 In a pan, cook the pancetta until crispy. Add garlic, cook for 1 more minute.
- 3 In a bowl, whisk eggs, yolk, and Parmesan. Season with salt and pepper.
- 4 Add spaghetti to the pan with pancetta. Remove from heat.
- 5 Pour egg mixture over the pasta, tossing quickly. Add reserved pasta water as needed for creaminess.
- 6 Serve immediately, topped with extra Parmesan and parsley.
