Ingredients
- • 500 g chicken breast, diced
- • 1 onion, chopped
- • 2 cloves garlic, minced
- • 1 tbsp ginger, grated
- • 2 tbsp curry powder
- • 400 ml coconut milk
- • 2 tbsp tomato paste
- • 1 tbsp olive oil
- • Salt and pepper, to taste
- • Fresh coriander, for garnish
Instructions
- 1 Heat oil in a large pan. Sauté onion, garlic, and ginger until fragrant.
- 2 Add chicken, cook until browned.
- 3 Stir in curry powder and tomato paste, cook for 1 minute.
- 4 Pour in coconut milk, stir well. Simmer for 15-20 minutes until chicken is cooked through.
- 5 Season with salt and pepper. Garnish with coriander.
- 6 Serve with rice or naan bread.
